Ingredients:
1 pound ground chicken ( I used ground turkey)
1/2 onion, minced
salt and pepper
2 garlic cloves, minced
1 inch of ginger, peeled and grated
1 Tablespoon sesame oil
1/2 can water chestnuts, minced
2 1/2 Tablespoons soy sauce
1/2 Tablespoon water
1 Tablespoon peanut butter
1/2 Tablespoon Honey
1 Tablespoon + 1 teaspoon rice wine vinegar
2 teaspoons chili garlic sauce
1/4 cup peanuts
10-12 lettuce leaves, rinsed and patted dry
Brown meat, onion, salt and pepper. Add garlic and ginger. Combine sesame oil, soy sauce, water, peanut butter, honey, rice vinegar, chili garlic sauce and pepper in a small microwavable dish. Microwave 20 seconds. Add to meat and mix well. Add green onion and water chestnuts.
Cook an additional 1-2 minutes. Sprinkle with chopped peanuts. Serve with cold lettuce leaves.
